Vacuum Packaging and Modified Atmosphere Packaging: A Guide for Brazilian Food Processors on Application and Selection
- Vacuum packaging removes internal air to inhibit oxidation and the growth of aerobic microorganisms, and is suitable for cured meats, aged cheeses and processed grains.
- Modified atmosphere adjusts the gas composition inside the package, catering to fresh products such as fresh meat, cut fruits and ready-to-eat meals that require texture and color maintenance.
- Material and specification selection must combine gas and moisture barrier properties, sealing compatibility and suitability for the filling equipment already used on the production line.
The definition of packaging technology starts with an analysis of food characteristics and logistics flow. For processed products with lower moisture content, vacuum packaging is usually sufficient to extend shelf life without altering their sensory properties. For fresh items sensitive to dehydration and loss of appearance, modified atmosphere packaging enables control of oxygen, carbon dioxide and nitrogen concentrations according to the needs of each category.
When selecting materials, it is essential to prioritize multilayer structures with barrier properties compatible with the target shelf life, avoiding gas exchanges that compromise preservation. Thickness specifications and film types must also be tested with the plant's sealing equipment to reduce losses caused by improper sealing. For processors of different sizes, local suppliers usually offer standardized and customized options based on production volume.
Regarding costs and delivery times, vacuum packaging generally has a simpler structure and lower unit cost compared to modified atmosphere solutions, which require stricter barrier control and, in some cases, additional valves or components. It is recommended to request samples for performance testing before placing large-scale orders, as well as aligning replenishment timelines considering the seasonality of food production in Brazil. Joint planning with suppliers helps balance preservation, operating costs and material availability.
